Savour smoky beans, sweetcorn and tender veggies in Geeta’s Fiery Tomato & Black Garlic Sauce, served in crisp tacos with coriander, avocado, sour cream and a squeeze of lime.

Tacos might seem like a quick snack, but with a little care, they become a flavour-packed feast! Smoky beans, sweetcorn, tender veggies and the spicy kick of Geeta’s Fiery Tomato & Black Garlic Sauce transform simple shells into something special. Topped with fresh coriander, creamy avocado, tangy lime and sour cream, every bite is a perfect mix of textures and flavours and you can always add your favourite toppings for your own bit-naughty twist!

Ingredients

  • 1 tbsp olive oil
  • 1 red onion, chopped
  • 1 red pepper, diced
  • 1 courgette, diced
  • 410g can black-eyed beans or red kidney beans drained and rinsed
  • 198g can sweetcorn
  • 340g jar Geeta’s Firey Tomato & Black Garlic Sauce
  • 12 taco shells
  • Small handful coriand
  • Sour cream, lime wedges and sliced avocado to serve

Method

  1. Heat 1 tbsp oil in a large frying pan and cook the onion and beginning to soften.
  2. Add the red pepper and courgette and cook for a further or a five minutes.
  3. Add the beans, sweetcorn and Geeta’s Firey Tomato & Black Garlic Sauce and simmer over a low heat with the lid on for 10 minutes, stirring occasionally.
  4. Heat the taco shells according to pack instructions.
  5. Stir the coriander through the chilli and serve in the tacos with wedges of lime to squeeze over, sliced avocado and soured cream.
