Shitake Mushrooms & French Beans

Brinjal or aubergine pickle is an Indian favourite and gives this warm salad a sweet and tangy bite.

Aubergines are often thought of as an acquired taste but they are the star ingredient in one of India’s favourite pickles. The sweet, slightly pungent flavours of the pickle create an intriguing counter-balance to the shitake mushrooms and French beans in this warm salad recipe.


  • 200g shitake mushrooms or any mushrooms of your choice
  • 200g French beans
  • 2-3 tbsp Geeta’s Aubergine Pickle
  • 2 tbsp oil
  • 1/2 cup plain yoghurt or alternatively 1/2 small tub mascarpone cheese


1. Heat the oil and stir fry mushrooms and beans.
2. Add the aubergine pickle and allow the mixture to cook for 5 minutes.
3. Add the yoghurt or mascarpone cheese and a tablespoon of water if required and warm through.
